Ingredients

- 1 c. à soupe grated lemon zest plus 3/4 cup (180 ml) fresh lemon juice, plus additional zest for serving
- 2 /3 cup granulated sugar (4 2/3 ounces; 132 g)
- 2 /3 cup (160 ml) sweetened condensed milk
- 4 tasse ice cubes (15 1/2 ounces; 439 g), divided
Method
- 1.In a medium bowl, combine lemon zest and sugar. Using fingers, rub together until sugar feels damp and mixture is fragrant, about 1 minute. Let stand for 20 minutes, rubbing sugar mixture together every few minutes until very fragrant.
- 2.In a blender, combine lemon juice, sweetened condensed milk, sugar mixture, and 1 cup ice. Blend until smooth and creamy, about 30 seconds.
- 3.Add remaining 3 cups ice and blend until thick and fluffy, about 30 seconds. Divide evenly between 2 chilled glasses. Top with additional lemon zest, if desired, and serve immediately.
