White chocolate and citrus Christmas log

Ingredients
For 4 servings
- 100 g 100 g Sifted flour
- 4 4 Eggs
- 75 g 75 g Sugar
- 1 pincée 1 pinch Salt
- 3 3 Oranges
- 1 1 Pink grapefruit
- 25 cl 25 cl Liquid cream
- 2 Two spoons. Soup Sugar Ice
- 200 g 200 g White chocolate
Method
- 1.Preheat oven th. 6 (180°C). Whip the egg yolks with the sugar until the mixture whitens. Add the flour gradually. Stir in white eggs in firm snow with 1 pinch of salt. Pour on a baking sheet covered with sulphurized paper. Bake 15 minutes. Turn the genoise over a damp cloth, remove the paper and roll it. Book. Peel the citrus fruits alive and remove the membranes from each neighbourhood. Detail the neighborhoods in small pieces by reserving a few wholes for decoration.
- 2.Melt the chopped chocolate in the microwave with 5 cl of cream. Beat the rest of the very cold cream into firm chantilly with sugar. Gradually add it to the chocolate.
- 3.Spread the cream except 5 spoons. about tablespoon, on the sliced genoise, sprinkle with citrus pieces and roll again. Envelope with food film while holding tight and book for 3 hours.
- 4.Cover the reserved cream log and decorate citrus districts. Serve without delay.
