Christmas log Tiramisu way

Ingredients
For 4 servings
- 250 g 250 g mascarpone
- 3 3 eggs
- 125 g 125 g red cane sugar or brown sugar
- 1 tasse 1 cups espresso coffee
- 36 36 spoon biscuits
- 1 1 c. to s. of marsala
- 1 1 Bitter cocoa or unsweetened cocoa powder
- 1.5 g 1.5 g gelatin powder
Method
- 1.Dilute gelatin in a little water.
- 2.Let it rest.
- 3.In a large salad bowl, beat the egg yolks with the cassonnade.
- 4.Add the mascarpone by mixing gently with maryse.
- 5.Add gelatin.
- 6.Beat the whites in firm snow.
- 7.Gently incorporate them into the mascarpone preparation.
- 8.First add 1/3 of the whites.
- 9.Add the other two thirds.
- 10.In a large bowl (or small dish), mix the espresso and marsala.
- 11.Cover the cake mould with food film.
- 12.Pour half the cream in mascarpone.
- 13.Spoon cookies (2 to 3) quickly into coffee.
- 14.Align them to the centre of the mould.
- 15.Cover with cocoa powder.
- 16.Pour the rest of the cream.
- 17.Cover the entire surface with teaspoon cookies soaked in coffee.
- 18.Cover the food film log.
- 19.Allow to take in the refrigerator for at least 12 hours.
- 20.Gently remove the log on a serving dish.
- 21.Remove the film that covers it.
- 22.Sprinkle the cocoa powder surface.
