Pineapple frozen log

Ingredients
For 4 servings
- 10 tranche 10 slices of pineapple in can (425 ml)
- 1 l 1 l vanilla ice cream
- 2 2 tablespoons of grated (or frozen) fresh ginger
- 16 16 dates
- 60 g 60 g of unsalted shelled pistachios
- physalis fruit
- 1 1 /2 vanilla pod
Method
- 1.To make the pineapple icewood:
- 2.Remove the ice from the freezer in advance so that it softens slightly, but does not let it melt.
- 3.Meanwhile, strip dates and chop them in a robot with 2 tablespoons of ice.
- 4.Cut the pistachios coarsely.
- 5.Malax the ice with ginger, dates and pistachios, then put it back in the freezer for 20 minutes so that it strengthens a little while remaining supple.
- 6.Drain the pineapple slices.
- 7.Spread a large piece of food film on the worktop. Spread 1 inch of ice pineapple slices on one side and stick to each other by stacking them in the middle of the food film. Once the cylinder is formed, remove the remaining ice inside.
- 8.Reseal the food film on the log, then put it in the freezer for 6 hours horizontally.
- 9.Pull out the log a little in advance.
- 10.When serving, remove the food film, place the log on a long dish and decorate it with physalis fruits and 1⁄2 vanilla pod.
- 11.Tip: you can macerate dates in amber rum.
