Strawberry frozen log

Ingredients
For 4 servings
- 250 g 250 g Strawberries
- 50 g 50 g Grouse
- 20 cl 20 cl 20% MG liquid cream
- 130 g 130 g Sour
- 3 3 Egg whites
- 1 pincée 1 pinch Salt
Method
- 1.Rinse the strawberries quickly, sponge and peel. Pour into a pot of 10 cl of water and 80 g of sugar and heat over medium heat without boiling. Add the strawberries, except 5, and the cream, then mix. Pour into a sheath and let it take 3 hours.
- 2.Remove the ice from the sherbet and put it in a cake pan lined with sulfurized paper. Book the freezer again 3 hours.
- 3.Rinse and sponge the currants. Mount the white eggs in firm snow with the remaining sugar and salt. 10 minutes before serving, remove the ice on a dish and cover it with white snow. Draw striations to the fork and brown the log under the grill of the oven less than 1 min, monitoring it to prevent it from melting.
- 4.Serve the decorated log with the currants and reserved strawberries. Enjoy immediately.
