Fish burger

Ingredients
For 4 servings
- 4 4 breads Burger Creation seeds Jacquet
- 1 1 red onions
- 1 1 carrot
- 1 1 branches of celery
- 4 4 green salad leaves
- 1 1/4 cucumbers
- 1 c. à café 1 teaspoons of rice vinegar (or cider)
- 2 pincée 2 pinches of sugar
- 4 4 white fish fillets (Colin, Eglefin, Merlu)
- 1 1 eggs
- 20 g 20 g flour
- 100 g 100 g of breadcrumbs
- 2 c. à soupe 2 tablespoons of grape seed oil
- salt and black pepper from the mill
- 1 1 egg yolk
- 1 c. à café 1 teaspoon mustard
- 10 cl 10 cl rapeseed oil
- 2 2 sour-sweet pickles
- 5 5 strands of chives
Method
- 1.Wash and cut cucumber into thin slats. Degrate with vinegar and sugar.
- 2.Peel and cut the onion and carrot into thin slices.
- 3.Remove the celery threads and cut into thin slices.
- 4.Prepare the tartar sauce: cut the pickle into small cubes, chisel the chives. Mix mustard and egg yolk. Stir in the sauce gradually with oil and whisk constantly. Salt with a pinch of salt, pepper. Add the pickle and chives. Settle.
- 5.Cook the fish: Beat the egg. Pass fish fillets into flour, then into egg and breadcrumbs. Sauté breaded fish fillets in hot oil 1 to 2 minutes on each side, set aside on absorbent paper.
- 6.Cut the burger breads in half. Eventually, warm the burger breads open for a few minutes in an oven at 180°C.
- 7.On the base, spread some tartar sauce, add salad, marinated cucumber, fish fillet, carrots, celery and red onions. Finish with tartar sauce and close the burger. Eat immediately.
