- 12 12 nuts Saint Jacques
- 0.5 0.5 Orange juice
- 1 1 Lemon juice
- 2 c. à soupe 2 tablespoons Nut oil
- 4 c. à soupe 4 tablespoons rapeseed oil
- Mixture of berries
- 0.5 0.5 boot(s) Caboulette
- Salt pepper
Method
- 1.Preparation of dressing and rest
- 2.First prepare the lemon dressing to marinate the Santiago nuts. In a mortar or blender, grind 1 tablespoon of berries. In a salad bowl, mix the juices, crushed berries and oils. Finish the marinade with salt and pepper. Finally, emulsify the mixture with a fork or a small whip (reserve 30 min fresh).

- 4.Clean the nuts of Santiago, on a clean worktop. Thinly slice them into carpaccio slices and place them in individual plates.
- 5.Assembly
- 6.All you have to do is pour the marinade previously passed to the Chinese (to avoid pieces of berries). Then sprinkle with a few pinches of chiselled chives.
