- 60 g 60 g Sugar powder
- 25 cl 25 cl Liquid cream
- 4 cl 4 cl Strawberry syrup
Method
- 1.Preparation of strawberries
- 2.First wash the strawberries thoroughly under fresh water, then water them. Cut the largest in two or four depending on their size, so that they are well distributed in the charlotte. Reserve a few wholes for the final decoration of your dessert.
- 3.Making the chantilly
- 4.Pour the very cold liquid cream into a salad bowl. Using an electric whip, mount the cream in firm chantilly, gradually incorporating the sugar powder. Continue whisk until the cream is firm, smooth and airy. Take care not to beat her too much to prevent her from cutting.
- 5.Imbibing cookies
- 6.Pour the strawberry syrup into a hollow plate and stretch it with a little water. Sprinkle the biscuits with a spoon quickly in this mixture to soak them well without softening them completely. Then place the cookies soaked against the walls and in the bottom of your charlotte mould lined with food film.

- 8.Put a first layer of strawberries on the bottom cookies, then cover with whipped cream. Then alternate the layers of biscuits with a spoon, pieces of strawberries and cream until the ingredients are exhausted, finishing with a layer of biscuits to close the charlotte.
- 9.Rest in the refrigerator
- 10.Carefully cover the mould with food film and place it in the refrigerator for at least 3 hours. This time is essential to allow the charlotte to take well and facilitate the subsequent release. Your dessert will gain in style and freshness.

- 12.When serving, gently demolish the charlotte by using the food film. Decorate the top with the entire strawberries reserved, some fresh mint leaves and, if you like, some strawberry coulis. Serve well fresh to make the most of the lightness and gourmetness of this dessert.
