Potato chips in the oven

Ingredients

- 2 2 Potato with firm flesh
- 4 c. à café 4 c. Coffee olive oil
- Salt pepper
- Dried herb(s)
Method
- 1.Preparation of potatoes
- 2.You have the choice of peeling your potatoes or keeping the skin to give them a rustic side but you will then have to wash them to remove the soil.
- 3.Adding water
- 4.Prepare a large bowl full of cold water (attention, not to the top because the potatoes will take some space, add some if necessary at the end of the cut).
- 5.Cut
- 6.Cut the potatoes into thin slats with a robot if you're lucky to have one, otherwise I recommend the mandolin. You can also opt for cutting with a good sharp knife (tested), so your slats will be less uniform and less thin but it still works.
- 7.Rest
- 8.Soak the apple slices in the water as they are cut, 15-20 min to remove the starch that would stick them.
- 9.Guttering
- 10.Drain them then wipe them between two clean towels or absorbent paper.
- 11.Seasoning
- 12.Place the slats in a single layer on a baking sheet. Water the slats with a few drops of oil, sprinkle with salt, possibly pepper and herbs of your choice.
- 13.Cooking
- 14.Bake at 140°C for about 40 min (and return mid-cook). Be careful, some chips can cook faster, so watch the cooking and remove those that start to brown before the end of the time.
- 15.After cooking
- 16.Repeat until the potato slats are exhausted.
- 17.Finish
- 18.At the outlet of the oven, place the chips on absorbent paper to remove the excess fat.
- 19.Tasting
- 20.Enjoy without delay because they soften over time and do not keep... And yes, it's natural!
