Apricot Jam with Tonka Bean

Ingredients

- 1 kg 1 kg apricots (pitted)
- 750 g 750 g caster sugar or granulated sugar
- 1 1 tonka bean
- 1 Juice of 1 lemon
Method
- 1.Wash the apricots, pit them and cut them into pieces, then weigh them. Put the apricots, the sugar and the lemon juice in a basin. Stir and let macerate overnight. The next day, scald the jars and the lids, and let them dry on a clean cloth.
- 2.Grate the tonka bean into the pot and bring to a boil. Let cook over high heat for 10 min while skimming. Lower the heat and let it cook for another 45 min, stirring from time to time. Once the desired consistency is reached, pour the jam into the jars, close them, turn them upside down and leave them like that until completely cooled.
