Ingredients
For 4 servings
- 1 kg 1 kg Grouse
- 800 g 800 g Sugar powder
- 1 1 Lemon
Method
- 1.Start by rinse your gooseberries carefully and remove them from their clusters. Place them in a salad bowl, then pour the sugar and lemon juice over. Mix well the set and let macerate for an hour so that the flavors develop. Once the maceration time has passed, pour the mixture into a jam pan. Put the heat on high and bring to a boil stirring regularly. You will see foam forming on the surface - It's normal, remove it with a skimmer to get a clear jam. Cook 5 minutes over high heat while stirring. Test the cooking by taking a drop of jam on a cold plate - she has to ride lightly when you push her with your finger. Once the ideal texture has been reached, remove the basin from the fire. Pour your hot jam quickly into sterilized pots, close them immediately and turn them over for a few minutes. This operation creates a vacuum of air that seals the pots naturally. Let them cool completely at room temperature before storing them.
