Plum jam

Ingredients
For 4 servings
- 1 kg 1 kg prune
- 1 l 1 l tea
- 650 g 650 g sugar
- 1 1 small glass orange liqueur
- 1 verre 1 glass water
Method
- 1.Soak the prunes in 1 litre of tea the previous day.
- 2.Cook the prunes 15 minutes in the soaking tea. Drain them, cut them in half, and denoyaute them. Place the prunes in the vegetable mill or blender.
- 3.Weigh the puree obtained to calculate the weight of the sugar. Gently melt the sugar with 1 glass of water. Then carry the syrup over high heat to the 'little bolt' (really syrupy consistency).
- 4.Pour the prune purée into the boiling syrup. Boil 10 minutes while stirring continuously.
- 5.The jam is at the point when it has taken the consistency of a thick paste that detachs from the basin. Remove from heat and add orange liquor.
- 6.Put in pots and cover according to the method of your choice.
