Method

- 2.Start by preheating your oven to 180°C (th.6). This will make it possible to gratify the pancakes once finished and mounted, thus guaranteeing a golden and appetizing surface at the time of service. While the oven heats, prepare all the ingredients necessary to make the recipe.
- 3.Preparation of pancake paste
- 4.In a large bowl, pour the flour with a pinch of salt, then make a well in the center. Add the eggs and oil. Gradually pour the half-skimmed milk while whisking vigorously in order to obtain a smooth dough without lumps. Leave the dough for about 10 minutes.
- 5.Cooking pancakes
- 6.Heat a non-stick pan with a little oil. Pour a layer of dough, then cook each pancake 1 to 2 minutes per face, until you get a beautiful golden color. Repeat the operation until the dough is exhausted. Keep pancakes under a clean cloth to avoid drying.

- 8.In a saucepan, mix 60 g of flour with 3 tablespoons of fresh cream and add 500 ml of semi-skimmed milk gradually. Season with salt, pepper and nutmeg. Stroll constantly over low heat until you get a smooth and thick bechamel, perfect for covering your pancakes.

- 10.Place a flat pancake on your worktop, garnish it with bechamel, add the ham dice and sprinkle with grated cheese. Gently roll the pancake, place it in a baking dish. Repeat the operation with all the pancakes, then coat them with the rest of the bechamel. Sprinkle with grated cheese if desired.

- 12.Bake the pancake dish in the preheated oven at 180°C. Let gratin for 10 to 15 minutes, until the top is golden and the cheese has melted. Watch the cooking to prevent pancakes from burning, then exit the dish delicately so as not to burn you.
