Curried Quinoa

Ingredients
For 2 servings
- 2 c. à soupe olive oil, or as needed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tasse quinoa
- 2 tasse chicken broth
- 1 c. à soupe curry powder, or to taste
- 1 c. à soupe ancho chile powder
- salt and pepper to taste
Method
- 1.Heat oil in a large skillet over medium heat. Add onion and garlic and cook, stirring until soft, about 2 minutes. Add quinoa and cook, adding more oil if the pan seems dry. Stir until quinoa is lightly toasted, about 5 minutes.
- 2.Add broth to the pan and bring to a boil. Reduce heat. Add curry and chile powder. Cover and simmer until broth evaporates and quinoa is tender, about 25 minutes. Season to taste with salt and pepper.
