Ingredients
For 4 servings
- 1.5 kg 1.5 kg trout in 4 darns
- 100 g 100 g of half-salt butter
- 1 1 lemons
- 1.4 1.4 flat parsley boots
- 500 g 500 g of green beans
- 500 g 500 g of new early potatoes
- olive oil
- 1.2 1.2 garlic heads
- fine grey salt
- mill pepper
Method
- 1.Preheat the plancha over medium heat.
- 2.Rinse the potatoes.
- 3.Pour some olive oil on the plancha and place the potatoes.
- 4.Cover and let roast 10 minutes stirring regularly.
- 5.Stir the green beans and break them in half.
- 6.Add the green beans to the potatoes, season and add the crushed garlic into a shirt. Cover again and continue cooking for 10 minutes.
- 7.Remove and crush the flat parsley. Put the butter in a small skillet and cook to become hazelnut (5-6 minutes).
- 8.Meanwhile, lightly oil the darns and place them on the plancha. Count 4 minutes of cooking per side. Deglaze the hazelnut butter with the lemon juice, add the parsley and store on the corner of the plancha.
- 9.Stir the vegetables and check for cooking. Draw the topping to the bottom of the oval dish and place the darns in the centre while riding them. Pour the hazelnut butter over the fish and serve.
