Delicious traditional Carnival donuts

Ingredients
For 4 servings
- 150 g 150 g of melted butter
- 750 g 750 g flour
- 60 g 60 g baker's yeast
- 90 g 90 g sugar
- 37.5 cl 37.5 cl milk
- 3 3 whole eggs
- 0.8 0.8 c. to s. of rum
- 1 1 Cinnamon according to your tastes
- 1 pincée 1 pinches of salt or fine salt
- 1 1 Fry oil
Method
- 1.Tied a little milk and dissolved the yeast, then let stand for a few minutes.
- 2.In a large bowl, mix flour, sugar, salt and cinnamon into a well in the centre.
- 3.Add the beaten eggs, melted butter, rum and the rest of the lukewarm milk to the centre.
- 4.Stir in the mixture of milk and yeast and knead until smooth and homogeneous.
- 5.Cover the bowl with a clean towel and let the dough rise in a warm place for about 1 hour.
- 6.Ungass the dough by folding it over itself, then let it rise a second time for 45 minutes.
- 7.Spread the dough on a floured worktop and cut round with a glass or a piece cutter.
- 8.Heat frying oil at medium temperature in a casserole or fryer.
- 9.Dip the doughnuts in small amounts and brown on both sides, then drain on absorbent paper.
- 10.Immediately roll the remaining hot donuts in a mixture of sugar and cinnamon, then serve warm.
