Roasted turkey with caramelized litchi

- 200 g 200 g Raw fat
- 1 kg 1 kg Litchi fresh

Method
- 1.Preheat oven th. 6 (180°C). Salt and pepper inside turkey. Peel the litchi and cut 6 into pieces. Mix them with both greasy and diced bread crumbs. Salt, pepper. Fill the turkey with this stuffing and close the opening.
- 2.Roast the stuffed turkey for 2 hours and sprinkle with juice. 15 min before the end of cooking, add the remaining litchis and 2 spoon. Maple syrup soup.
- 3.Peel the shallots and mix them in a pan with 30 g butter, 1 spoon. Honey, salt and pepper soup. Cover with water and place a disc of sulphurized paper. Let cook until the water is reduced. Remove the paper and caramelize a few minutes over high heat.
- 4.Reserve the turkey and litchis in a dish covered with blue foil. Spread the chicken broth tablet in 40 cl water and add it to the defatted cooking juice. Boil for 5 minutes. Filter and insert the remaining butter into parcels by whipping. Serve this sauce with turkey and litchi. Enjoy hot.
