Smoked magret stuffed endives, green apple and roasted hazelnuts

Ingredients
For 4 servings
- 2 2 endives
- 1 1 fillet of smoked duck
- 60 g 60 g coarsely chopped hazelnuts
- 1 1 apple granny smith
- 8 c. à soupe 8 tablespoons extra virgin olive oil
- 2 2 mandarins or 1 orange
- 2 c. à soupe 2 tablespoons cider vinegar
- 1 pincée 1 pinch curry
- Salt and pepper 5 berries
Method
- 1.In a small bowl, pour olive oil, orange or tangerine juice and vinegar. Add curry, salt and pepper, then mix well with a whisk until you have a homogeneous dressing.
- 2.Take the endives, rinse them with fresh water and cut the base. Gently untie the leaves one by one to form pretty trays.
- 3.Wash the granny apple and cut it into thin slats or small dice according to your preference. Divide the apple pieces into each endive tray.
- 4.Cut the smoked duck breast into thin slices and place them harmoniously on the apples in the trays.
- 5.Crunch the hazelnuts coarsely and pour them generously on all the trays to bring crunch.
- 6.Just before serving, whisk the dressing again and gently water each tray. Enjoy without delay!
