Courgette fries in Parmesan

Ingredients
For 4 servings
- 100 g 100 g Parmigiano Reggiano
- 3 3 medium zucchini
- 2 2 eggs
- 5 c. à soupe 5 tablespoons of cornstarch
- 50 g 50 g of breadcrumbs
- 1 1 greek yogurt
- 1 c. à soupe 1 tablespoons of lemon juice
- 1 gousse 1 clove of garlic
- 12 12 basil leaves
- rosemary
- salt
- pepper
Method
- 1.Preheat oven to 200°C.
- 2.Cut the zucchini into fries.
- 3.Freshly grating the Parmigiano Reggiano
- 4.Place 3 plates next to each other: one with cornstarch, one with beaten eggs, and the last with Parmigiano Reggiano mixed with breadcrumbs.
- 5.Pass the zucchini successively into the cornstarch (tap to remove the excess), the beaten egg, then the breadcrumb/Parmigiano Reggiano mixture. Place on an oven plate covered with baking paper.
- 6.Bake for 15 minutes.
- 7.During cooking, prepare the sauce: squeeze the garlic, mix with the Greek yogurt and lemon juice. Season with salt and pepper. Finely chop the basil, add it, mix.
- 8.Serve the fries with zucchini and parmesan with sauce.
