Classic Chocolate Ganache

Ingredients
For 4 servings
- 80 g 80 g chocolate
- 20 g 20 g butter
- 100 g 100 g flour
- 100 g 100 g sugar
- 4 4 egg whites
- 4 4 egg yolks
Method
- 1.Preheat oven to 180°C (th 6).
- 2.Melt butter and chocolate in the microwave.
- 3.Break the egg yolks (beat them). Add the sugar. Mix until the mixture is bleached.
- 4.Add melted chocolate.
- 5.Mount the whites with the drummer (at least 5 min).
- 6.Gently add them to the mixture to avoid breaking them. Then add the flour gradually. The dough is ready.
- 7.Put it in a socket pocket.
- 8.Butter the frame of a bottomless mould. Pour in a thin layer of dough using the socket pocket. Tap the mould (which is on a tray going into the oven) on the worktop to remove the air bubbles.
- 9.Bake at 180°C about 10 minutes. Let it cool down. Gently pass it over to remove the thin layer of craw.
- 10.Make a second cookie to have several layers. Spread on the first biscuit of the chocolate ganache, place the second on the assembly and finally, cover the ganache cake. And decorate.
