- 1 kg 1 kg Well ripe apricots weighed denoyautes
- 1 kg 1 kg Crystallized sugar
- 1 1 Lemon
Method
- 1.Rinse, remove, and cut the apricots into pieces. Put them in the vegetable mill, fine grill. Weigh the puree.
- 2.Put it in a jam pan with its sugar weight and lemon juice. Bring to a boil over high heat, stirring often as the mixture tends to attach.
- 3.Cook about 20 min. Check the cooking by pouring a drop of jelly on a cold plate: it must freeze immediately.
- 4.Scum and proceed with potting. Let cool until the next day and close the pots.
