Mayonnaise muslin easy: the light and airy home recipe

- 1 1/2 peanut oil
- 3 3 teaspoons of strong mustard
- 3 3 eggs
- 1 1 fillet of wine vinegar
- salt
- pepper
Method
- 1.Break your eggs and carefully separate the whites from the yellows. In a bowl, put the 2 yellows with mustard, a good pinch of salt and fresh ground pepper. You're ready to start! Using a whip, work your yellows and mustard together. Pour the oil very gradually, in fillet, stirring constantly so that the sauce emulsifies well. Finish with a line of white vinegar to balance the flavors. Beat the egg white until it is in strong, swollen snow. If you prefer, you can replace the white with 80 g of whipped cream. Gently pour your egg white into snow (or cream chantilly) on the mayonnaise and lightly lift the whole to the fork to incorporate it well without breaking the airy texture. Your mousseline mayonnaise is ready to serve!
