Easy individual Easter Nest

- 200 g 200 g Chocolate pastry black
- 100 g 100 g Milk chocolate to be cooked
- 120 g 120 g Sheet
- 40 g 40 g Sweet butter
- 80 g 80 g Chocolate praline
- 10 g 10 g Green sugar billets
Method
- 1.Preparation of the chocolate mixture
- 2.Start by melting the pastry dark chocolate, milk chocolate and praline chocolate together, with a water bath or microwave in steps of 30 seconds. Mix carefully to obtain a smooth and homogeneous texture, then add the sweet butter cut into small pieces, while continuing to mix so it melts completely.
- 3.Incorporation of the leaf
- 4.Gradually add the flake into the melted chocolate mixture, then gently incorporate with a spatula. Make sure to coat all flakes of flakes well to ensure a crisp and uniform texture throughout the mixture, without breaking the flakes to preserve the crisp.
- 5.Making nests
- 6.Divide the mixture on a plate covered with sulphurized paper, forming four small well spaced piles. Use a spoon to shape each nest: lightly dig the center with the back of the spoon to create a cavity. Leave the edges thicker, to recall the shape of a traditional nest.
- 7.Rest in the refrigerator
- 8.Place the formed nests in the refrigerator for at least 2 hours. This step is essential so that the chocolate freezes properly and nests retain their structure at the time of dressing. Make sure the nests are set so that they do not touch each other during rest.
- 9.Decoration and service
- 10.Gently remove the nests from the refrigerator. Garnish the centre of each nest with a few green sugar balls to imitate small Easter eggs. Present each individual nest on a plate or a nice dish, then serve immediately to enjoy a crisp and festive dessert.
