Ingredients

- 500 g 500 g Sugar powder
- 150 g 150 g Condensed dried fruits: 50 g almonds
- 50 g 50 g Nuts
- 50 g 50 g Pistachios
- 2 2 Egg whites
- 175 g 175 g Honey
- 1 1 spoon. Sour almond aroma
- 60 g 60 g Soft butter
- 1 pincée 1 pinch Salt
Method
- 1.Snow up the egg whites with a pinch of salt and a tablespoon of sugar.
- 2.Mix remaining sugar with honey and 2 spoons in a saucepan. Soup water. Bring to a boil then pour the sugar in fillet over the snow whites, without stopping whisking.
- 3.Add the bitter almond aroma to the mixture. Cook again over very low heat, without stopping to stir with a wooden spoon. When the preparation is easily detached from the bottom and walls of the pan, remove from the heat. Stir in softened butter and crushed dried fruits. Mix well.
- 4.Tap a rectangular mould of food film and pour the preparation by flattening with the palm of the hand. Put a weight on it to put it down. Let cool and cut into cubes before tasting.
