- 150 g 150 g White ham
- 3 3 Egg(s)
- 20 cl 20 cl Fresh cream
- 10 cl 10 cl Half-skimmed milk
- 80 g 80 g grated emmental cheese
- 1 c. à soupe 1 Tbsp Mustard
- 1 c. à soupe 1 tbsp. Tuna marinated with olive oil

Method
- 1.Preheating
- 2.Start by preheating your oven to 180°C (th.6) to reach the right temperature during assembly. Meanwhile, prepare the necessary ingredients on your work plan to optimize the preparation time.
- 3.Preparation of asparagus
- 4.Dasperge the green tips, rinse them gently under cold water, then cut them if necessary. Bring a large saucepan of salted water to a boil and dip the asparagus tips there for 8 minutes. Put them under cold water to stop cooking and keep them aside.
- 5.Preparation of lining
- 6.Cut the white ham into thin strips. Beat the eggs in a large salad bowl and add the cream, milk, mustard, olive oil marinated tuna, salt, pepper and a pinch of nutmeg. Mix carefully until a homogeneous preparation is obtained.
- 7.Assembly
- 8.Lower the broken dough in a buttered pie pan. Stitch the bottom with a fork, then brush it with mustard. Divide the ham strips and asparagus harmoniously on the bottom of the pie, then pour the egg and milk mixture. Sprinkle generously with grated emmental.

- 10.Bake the quiche in the preheated oven. Cook for 35 to 40 minutes, until the garnish is golden, swollen and the dough is crisp. Monitor the coloring and adjust the cooking time if necessary according to your oven.
