Quiche of the Mother's Day with salmon and leeks

- 20 cl 20 cl Thick fresh cream
- 10 cl 10 cl Half-skimmed milk
- 80 g 80 g grated emmental cheese
- 20 g 20 g Butter
- 2 c. à soupe 2 tablespoons Aneth
- Nutmeg

Method
- 1.Preheating the oven
- 2.Start by setting your oven to 180°C (th.6) so that it is at a good temperature for cooking the quiche. While the oven heats, take advantage of it to prepare the other ingredients and save time on the rest of the recipe.
- 3.Preparation of leeks
- 4.Carefully clean leeks under running water to remove any trace of soil. Cut them into thin slices. Cook them in a skillet with butter over medium heat for 10 minutes until they become tender and melted. Stir regularly to prevent them from attaching.
- 5.Preparation of salmon
- 6.Cut the fresh salmon into small dice about 2 cm. Be careful to remove any edges. Reserve the salmon in a fresh bowl as you continue the recipe, to preserve all its freshness and flavours.
- 7.Making the machine with quiche
- 8.In a large bowl, break the eggs and beat them with the thick cream and milk. Add chiseled dill, grat up some nutmeg, then salt and pepper at your convenience. Mix well to obtain a homogeneous preparation.
- 9.Assembly of quiche
- 10.Place the broken dough in a pie mould while keeping the baking paper. Stitch the bottom at the fork. Spread the cooked leeks, add the salmon dice, then pour the quiche device on the set. Finish with the grated cheese over the entire surface.
- 11.Bake
- 12.Bake the quiche in the preheated oven for 35 to 40 minutes. Make sure the top is golden and the filling is taken. If necessary, extend the cooking slightly. Take out the quiche and let it cool down a few minutes before gently demolishing it.
