- 1.Preheating
- 2.Start by preheating your oven to 180°C (th. 6) to ensure a homogeneous cooking at your quiche. While the oven reaches the right temperature, continue the preparation to optimize your cooking time.
- 3.Preparation of vegetables
- 4.Rinse the green asparagus carefully, cut and remove the hard part, then detail them into sections. Peel the peas and beans, then finely slice the new onions and the clove of garlic. Book the set for the suite.
- 5.Cooking vegetables
- 6.Bring a large saucepan of salted water to a boil. Dip the asparagus, peas and beans, let them cook for 4 to 5 minutes, until they are tender but crisp. Drain them quickly and dive into ice water to fix the color.
- 7.Preparation of quiche apparatus
- 8.Place the eggs in a large bowl, whisk them and incorporate the whole liquid cream and half-skimmed milk. Add Dijon mustard, salt, pepper, gratify some nutmeg. Mix vigorously to obtain a homogeneous texture.
- 9.Assembly
- 10.Roll your broken dough in a pie mould, sting the bottom with a fork. Divide the vegetables, garlic, new onions and crumbled fresh goat cheese harmoniously. Gently pour the quiche device over, then sprinkle with chives.

- 12.Slip the quiche into the preheated oven for 35 to 40 minutes. Watch for colour: the quiche must be golden and swollen. Push the tip of a knife into the centre: it must come out clean. Let it cool down before demolishing.

- 14.Remove the quiche from the oven, let it rest for 10 minutes to facilitate cutting and develop flavors. Cut in equal shares and serve warm or at room temperature, accompanied by a nice green salad for a balanced and spring meal.
