- 250 g 250 g Coconut nuts
- 1 sachet 1 Bag Vanilla sugar
- 10 g 10 g Butter
Method
- 1.Preheating
- 2.Start by turning on your oven and set it to 180°C (th.6) so that it reaches the ideal temperature during baking. A well preheated oven allows a homogeneous cooking and a beautiful golden color for your coconut rocks. Monitor the temperature with a thermometer if necessary.
- 3.Preparation of dough
- 4.In a large bowl, break the eggs and whisk them with sugar and vanilla sugar until you get a sparkling mixture. Gradually add the grated coconut and the melted butter. Stir long until you get a slightly sticky, homogenous, flavor-rich dough.
- 5.Shaping
- 6.Take portions of dough with your wet hands to shape small piles in the shape of rocks or pyramids, about 3 to 4 cm high. Place them on a plate covered with baking paper as you move, making sure that they are spaced to prevent them from touching the cooking.
- 7.Cooking
- 8.Place the rock plate in the hot oven and cook for about 20 minutes. Watch the cooking: the rocks must be nicely gilded on the edges but remain mellow inside. At the end of cooking, remove them from the oven and let them cool for a few moments before handling them.
- 9.Service and conservation
- 10.Gently transfer the cooled rocks to a serving dish. Serve them warm or cold, according to your desires. For better preservation, store them in an airtight metal box at room temperature. They will keep all their softness and flavor for several days.
