Veal rôti with asparagus and lemon on Mother's Day

- 1 kg 1 kg Cattle
- 2 2 green asparagus boot(s)
- 2 2 piece(s) Lemon(s)
- 2 2 piece(s) Chopstick
- 2 2 garlic pod(s)
- 25 cl 25 cl Poultry bud
- 15 cl 15 cl Dry white wine
- 20 cl 20 cl Fresh cream
- 2 c. à soupe 2 tablespoons Butter
- 1 c. à soupe 1 Tbsp. Old Mustard
- 2 2 piece(s) Thym
- 2 2 piece(s) Laurier
- Salt
- Pepper
Method
- 1.Preheating of oven and preparation of ingredients
- 2.Preheat the oven to 180°C. Remove the veal roast from the refrigerator for 15 minutes before starting to avoid heat shock when cooking. Rinse the green asparagus, cut the hard base of the stems and reserve them. Wash the lemons, finely remove the zest from one of them and press both. Peel and chop the garlic. Scissor the chives. Also prepare poultry broth, white wine, cream, mustard, thyme and laurel to have all the ingredients on hand.

- 4.In a large casserole or bake pan, heat the 2 tablespoons of butter over medium heat. Place the veal roast and brown it on all sides for a few minutes, turning it gently to get a nice regular coloration. Salt and pepper. Then add the chopped garlic, thyme and laurel around the meat to perfume the cooking without burning the spices.

- 6.Deglaze with dry white wine and allow to reduce one to two minutes to evaporate alcohol. Pour the chicken broth into the casserole, cover if possible, then bake the veal roast. Let cook for about 50 minutes, watering the meat regularly with the cooking juice, so that it remains mellow and simmers many flavors of lemon and herbs.

- 8.While roasted, heat a large saucepan of salted water. Dip the green asparagus and let them cook for a few minutes, until they are tender while keeping a slight firmness. Drain them immediately and then pass them under a cold water fillet or place them in an ice water bowl to fix their color. Then set them on a clean cloth to remove the excess water.
- 9.Finishing of lemon sauce
- 10.When the roast is cooked, remove it from the pot and place it on a board or dish. Cover it slightly with a sheet of aluminium paper and let it rest for a few minutes. Meanwhile, remove the thyme and laurel from the cooking juice. Add the cream, mustard, lemon juice and zest. Mix well then gently reduce over the heat until you get a smooth sauce. Season with salt and pepper.
- 11.Reheating asparagus in sauce
- 12.Add the 30 g of butter to the hot sauce to give it even more softness and shine. Then place the asparagus in the casserole or pan, then gently coat them with sauce without breaking them. Let them heat over low heat for two to three minutes. This step allows asparagus to soak in the flavours of veal juice, lemon and cream.
- 13.Roast cut and platter dressing
- 14.Slice the veal roast in regular portions, neither too thin nor too thick, to preserve its mellow. Place the slices in a large serving dish or directly on the plates. Spread the asparagus all around and sauté with some of the lemon sauce. Sprinkle with chiselled chives just before serving to bring a touch of freshness, color and an elegant finish perfect for a Mother's Day meal.
