Rice salad with vegetables and ham dice

Ingredients

- 300 g 300 g Cooked rice
- 350 g 350 g Diced ham
- 6 6 Tomato(s)
- 1 1 Green pepper(s)
- 1 1 Yellow pepper(s)
- 1 1 Shallots
- 3 c. à soupe 3 tablespoons Olive oil
- 1 c. à soupe 1 tbsp. Lemon juice
- Salt pepper
Method
- 1.Preparation of ingredients
- 2.Start by thoroughly washing tomatoes and peppers under cold water. Cut the ends, remove the seeds and cut the peppers into small, regular dice for a uniform distribution in the salad. Cut the tomatoes into pieces and peel and finely slice the shallot.
- 3.Assembly of rice and vegetables
- 4.Pour the cooked and cooled rice into a large salad bowl. Add ham dice, tomatoes, cut peppers and minced shallot. Gently mix with two large spoons to distribute all ingredients and avoid crushing vegetables.
- 5.Salad seasoning
- 6.In a small bowl, pour olive oil and incorporate lemon juice. Season with salt, pepper to taste and whisk for a homogeneous dressing. Pour on the rice salad, mix well so that each ingredient is coated with the sauce, then season it if necessary.
- 7.Service
- 8.Cover the salad bowl with a food film and place it in the refrigerator for at least 1 hour before serving. Serve well fresh, on the occasion of a picnic, a buffet or a friendly meal. Bring some chopped parsley to decorate and enhance the flavour.
