Fresh pomelos salad and avocado

Ingredients

- 3 3 pomelos
- 1.5 11⁄2 green lemon
- 3 3 lawyers
- 75 g 75 g salmon (or trout) eggs
- 1.5 11⁄2 spoon. rum soup
- 4 four spoons. soup oil
- chili of Cayenne
Method
- 1.Start by preparing the pomelos: remove all the skin by making sure to remove the white parts completely. Then gently cut the quarters by slipping the knife between the membranes to obtain a clean flesh.
- 2.Now take care of the lawyers: cut them in half, remove the core, and then remove the skin. Thin them into thin and regular slices.
- 3.Prepare the dressing in a small bowl by mixing freshly pressed lime juice, rum and oil. Season with a pinch of cayenne pepper according to your taste.
- 4.In a salad bowl, have the pomelos quarters and the slices of avocado. Pour the dressing over it and mix gently to coat all ingredients well.
- 5.Divide this salad into individual cuts, generously decorate with salmon eggs and serve well fresh to enjoy all the flavors.
