Savoury salad with crisp carrots and bacon

Ingredients
For 4 servings
- 200 g 200 g Matching bacon
- 400 g 400 g Natural green lentils
- 4 Four spoons. Coffee Mustard
- 8 Eight spoon. Soup oil
- 6 6 Carrots
- 4 4 shallots
- 1 1 Parsley Boots
- 2 Two spoons. Wine vinegar
- Salt
- Pepper
Method
- 1.First peel the carrots, then cut them into thin regular slices.
- 2.Place the carrot washers in a steam basket and let them cook for 10 minutes until they are tender.
- 3.Meanwhile, pour the lentils into a saucepan and cover them with cold water. Bring to a boil.
- 4.Simmer the lentils over low heat for 30 minutes with the lid, adding the salt mid-cook. Then rinse them and drain them well.
- 5.Prepare the spices: peel and chop the shallots finely, rinse the parsley and chop it.
- 6.In a non-stick pan, sauté the bacon over medium heat for 5 minutes until they have a beautiful golden colour.
- 7.Prepare the dressing in a large salad bowl by mixing the vinegar, mustard and oil. Season with salt and pepper, then incorporate the chopped shallots.
- 8.Add drained lentils to the salad bowl, then the carrots and bacon are still hot. Gently mix together, sprinkle with fresh parsley and taste immediately.
