Sauce Rouille Express and Savoury

Ingredients
For 4 servings
- 1 1 Bintje potato
- 20 cl 20 cl of olive oil
- 4 g 4 g of garlic
- 1 1 trait of lemon juice
- 1 1 Cayenne pepper or Cayenne pepper
- 1 g 1 g of saffron
- 1 1 Salt or fine salt
Method
- 1.Start by cooking the potato with its skin in a saucepan of salted water until it is tender.
- 2.Once cooked, peel the potato while it is still hot and carefully crush it with the fork to obtain a smooth purée.
- 3.Season with salt, saffron and a pinch of Cayenne pepper according to your taste. Then add the finely chopped garlic and a few drops of lemon juice, then mix well.
- 4.Pour the olive oil gradually by turning constantly, as if you were preparing a homemade mayonnaise. Continue until you get a nice creamy sauce. Enjoy immediately or keep fresh.
