- 500 g 500 g Ground chicken
- 8 8 serving(s) Corn Tortilla
- 120 g 120 g Mayonnaise
- 15 g 15 g Dijon mustard
- 10 ml 10 ml Worcestershire Sauce
- 1 1 Lemon(s)
- 1 1 clove(s) Garlic
- 30 ml 30 ml Olive oil
- 1 1 Roman Salad
- 60 g 60 g Parmesan
- 80 g 80 g Grilled bread
- 15 ml 15 ml Oil
- Salt
- Pepper
Method
- 1.Preparation of Caesar sauce
- 2.In a bowl, pour mayonnaise, Dijon mustard and Worcestershire sauce. Add the lemon juice, then grat or squeeze the clove over it. Then add the olive oil and whisk to produce a smooth, homogeneous and appetizing sauce. Season slightly, pepper according to your taste, then mix one last time. Set aside as the preparation continues so that the flavours develop and the sauce is fresh at the time of assembly.
- 3.Preparation of salad and garnishes
- 4.Wash the roman salad carefully, dry it well, then mince it finely to obtain an easy to spread filling in the tacos. Grate or peel the Parmesan according to the desired texture. Crunch the roasted bread to form crunchy pieces of regular size, close to croutons. Place each element in a separate container to keep a clear organization. You will save time at the time of dressing and you will keep textures distinct between melt, crunch and fresh.
- 5.Seasoning of ground chicken
- 6.Place the chopped chicken in a salad bowl and season with salt and pepper. Mix just enough to spread the seasoning evenly, without overworking the meat to keep it tender after cooking. Then divide the chicken into 8 servings of as regular weight as possible. This distribution will help you to garnish each tortilla with corn in a homogeneous way and to obtain a similar cooking on all tacos.
- 7.Mounting of smash tacos
- 8.Take a corn tortilla and place in the centre a serving of chopped chicken. Spread it directly over the entire surface in a thin, even layer, almost to the edges. Press well with the fingers or back of a spoon to add the meat to the tortilla. Repeat with the other tortillas. This step is essential to regain the principle of smash tacos, with a direct meat-side cooking, very tasty and slightly crispy.
- 9.Meat-side tacos
- 10.Heat a large pan with oil over medium to high heat. When it is hot, place one or more tacos on the chicken side against the pan. Press slightly to promote contact with the hot surface. Let cook until the meat is well seized, golden in places and cooked at heart. Then turn the tacos to cook briefly the tortilla side, just enough to heat it up and give it a little outfit without drying it out. Do the same for all tacos.
- 11.Add sauce and garnishes
- 12.Place cooked tacos on a worktop or on plates. Spread or table some home-made Caesar sauce on each taco, keeping sufficient amount to avoid soaking the tortilla. Then add the minced Roman, then distribute the Parmesan generously. Finish with the pieces of crushed toast to bring the crunch characteristic of the Caesar-style garnish. Make sure to balance each taco to find meat, sauce, salad and crispy with each bite.
- 13.Plating and tacos service
- 14.Fold the tacos in half as soon as the topping is in place, without too tight to prevent the salad from escaping. Serve them immediately, while the chicken is still hot, the tortilla remains supple and the croutons keep their crunchy. You can offer the rest of Caesar sauce apart so that each seasoning fits its taste. These smash caesar tacos are ideally enjoyed every minute, to enjoy the contrast between hot, fresh and crispy.
