- 250 g 250 g Flour
- 125 g 125 g Soft butter
- 1 1 pinch(s) Salt
- 5 cl 5 cl Water
- For pastry cream
- 50 cl 50 cl Milk
- 2 2 Egg(s)
- 30 g 30 g Flour
- 80 g 80 g Sugar
Method
- 1.Preheating the oven
- 2.Preheat your oven to 180°C.
- 3.Start of preparation
- 4.In a bowl, beat the egg, sugar and salt.
- 5.Adding flour
- 6.Add all the flour at once and mix with your fingers.
- 7.Pastry work
- 8.Clear the dough that looks like sand.
- 9.Wetting
- 10.Add the soft butter (but above all not melted), then the selected perfume, knead the dough by hand to amalgamate it all add the water and finish kneading.
- 11.Rest
- 12.Put the dough in a ball, wrap it with a cloth and let it rest 30 minutes at 1 h in a cool place.
- 13.Spread the dough
- 14.Lower the dough in a roll on a slightly floured worktop or between two sheets of baking paper: it is ready to be used.
- 15.White baking of dough
- 16.Cook "white" at 180°25 to 30 minutes. The cooking should not be too intense: stop it as soon as the dough takes a golden blond color.
- 17.For pastry cream
- 18.Boil the milk with the chosen fragrance (vanilla or other).
- 19.Addition of ingredients
- 20.Beat the eggs and sugar, add the flour.

- 22.Pour over the hot milk.
- 23.Cooking and thickening of the cream
- 24.Put back on low heat to make thicken, stirring very carefully for 5 to 10 min. Stop cooking from the first bubbling.
- 25.Cooling
- 26.Transfer the cream into a salad bowl and film in contact (film paper directly placed on the cream), let cool.
- 27.Assembly
- 28.Finally, on the bottom of the dough (cooled), place the pastry cream, then the strawberries (about 800 grams).
