- 500 g 500 g Strawberry(s)
- 12 12 Spoon biscuit(s)
- 250 g 250 g Mascarpone
- 180 g 180 g Sugar powder
- 4 4 Egg(s)
- 0.5 0.5 Yellow Lemon(s)
Method
- 1.Preparation of biscuits
- 2.Cut the biscuits with a spoon in the bottom of the verrine.
- 3.Preparation of strawberries
- 4.Wash and peel the strawberries. Cut them into pieces and place them in a bowl. Press the half-lemon to recover its juice. Pour it over the strawberry pieces in the bowl. Then add 30 g of sugar. Crush the pieces of lemon strawberries with a fork, then spread half over the cookies in the verrines. Make a reservation.
- 5.Preparation of mascarpone
- 6.Separate the yolks from the egg whites. In a salad bowl, beat the egg yolks with the remaining sugar powder until they bleach. Add the mascarpone and mix well.
- 7.Snow White Assembly
- 8.Mount the egg whites in firm snow with an electric drummer. Gently incorporate them into the preparation with a spatula.
- 9.Assembly and rest
- 10.Remove the verrines from the fresh and pour in half the mascarpone preparation. Cover with the remaining strawberry purée then with the other half of mascarpone preparation. Reserve the tiramisus for a minimum of 2 hours before service.

- 12.Enjoy the fresh tiramisus, decorated for example with ripe semi-fraises and fresh mint leaves.
