Veloty of radish fans

Ingredients
For 4 servings
- 200 g 200 g Pink radish fan
- 1 1 Leek white(s)
- 1 1 White onion(s)
- 1 1 Potatoes
- 1 l 1 l Chicken broth
- 1 c. à soupe 1 Tbsp Fresh Cream
- 1 c. à soupe 1 tbsp Olive oil
- Salt pepper
Method
- 1.Preparation of radish fans
- 2.To begin with, wash and drain the radishes (reserve in a few for decoration) and slice them coarsely.
- 3.Preparation of onion
- 4.Peel and mince the onion finely.
- 5.Potato preparation
- 6.Peel and cut the potato into thin slices to facilitate cooking.
- 7.Preparation of leek
- 8.Wash and chop the leek white.
- 9.start cooking
- 10.Heat the oil in a saucepan, then cook the chopped onion for a few minutes until it is translucent, then add the radishes, leek and potato and cook about 3 min over low heat, without letting it take colour.
- 11.Adding broth and seasoning
- 12.Add the chicken broth, salt and pepper. Bring to a boil over medium to high heat.
- 13.Covered cooking
- 14.In the first broths, reduce the heat and simmer gently for 20 min.
- 15.Mixing
- 16.Once cooked, put the radish fans as well as the leek, potato and onion, and a little broth in the blender/blinder and mix all. Add a little broth as you move to a smooth consistency and incorporate the fresh cream into your velvety radish fan.
- 17.Finish
- 18.Correct the seasoning of your velvety radish fans if necessary.
- 19.Service
- 20.When serving, garnish your velvet with radish fantasies with a few radish fantas. You can accompany your velvety toasted bread spread, olive oil and Italian smoked ham and some fresh radishes for example.
