Method
- 1.To prepare this homemade dressing, take a bowl and pour the vinegar first. It is important to start with vinegar, because it can dissolve the salt well afterwards.
- 2.Then add salt and strong mustard to the bowl. Mix vigorously with a fork or a small whisk until the salt is completely dissolved and mustard is well incorporated into the vinegar.
- 3.Now, pour the oil gradually, in fillet, while continuing to whip. This step is essential to get a well emulsified and creamy dressing. Once the oil is perfectly mixed and your dressing has a nice homogeneous consistency, add the pepper according to your taste. This mustard dressing is perfect to accompany many dishes. You can use it to season a crisp green salad, freshly grated carrots, a juicy tomato salad, or endives. It sublimates all your crudities! For a gourmet entry, try it with a lawyer cut in half: just put a nice tablespoon of dressing in each half.
