Roasted pineapple with spices by Laurent Mariotte

Ingredients
For 4 servings
- 2 2 pineapples
- 6 c. à soupe 6 tablespoons of Corsican honey
- 1 1 cinnamon sticks
- 1 1 cloves
- 1 1 star badiane
- 1 1 ginger tips
- 1 gousse 1 vanilla pods
- 1 1 orange zest
- 80 g 80 g butter
Method
- 1.Prepare syrup: Put butter, honey, split vanilla pod, zests and spices in a saucepan.
- 2.Prepare pineapples: Peel the victoria pineapples alive and cut them into 6 pieces each.
- 3.Place the pineapple pieces in the syrup directly in the saucepan.
- 4.Remove the orange peels, add them and let roast for 20 minutes by coating them.
- 5.Place the pieces of pineapple on a large plate, add the caramel formed with honey on top and dispose of the badiane and vanilla pod.
