Tonio's Lump-Free Béchamel

Ingredients

- 1 l 1 l milk
- 100 g 100 g butter
- 100 g 100 g flour
- 1 g 1 g nutmeg
- 2 g 2 g pepper
Method
- 1.Melt the butter in a saucepan, being very careful not to let it fry.
- 2.Once the butter has melted, off the heat, add the 100 g of flour and whisk it to obtain a fairly thick and coarse cream, above all without lumps.
- 3.Gradually add the liter of milk, returning to low heat while continuing to stir regularly until you obtain a béchamel of your preferred consistency.
- 4.As you go, mix in both the pepper and the nutmeg to achieve a "spiced" flavor. Set aside and use it warm for your lasagna, stuffed zucchini, etc.
