Ingredients
For 4 servings
- 250 g 250 g Honey
- 100 g 100 g Glucose
- 200 g 200 g Sugar
- 65 g 65 g Water
- 2 2 Egg whites
- 100 g 100 g Almonds
- 50 g 50 g Almond kernels
- 2 2 Azyme paper sheets
Method
- 1.Cut 2 squares of azyme paper the size of the gratin dish and place one in the bottom.
- 2.In a dry skillet, roast the almonds for 2 min.
- 3.In a saucepan, heat honey at 140°C and in a second saucepan, do the same with sugar, glucose and water.
- 4.In the bowl of a robot, mount the snow whites on the 2/3 and pour the honey while continuing to mix and add the syrup. Let the robot spin for a few minutes and add the almonds.
- 5.Mix and pour quickly into the dish. Equalize with a spatula and cover with the second azyme leaf. Cut them into candy and let harden for 4 hours and taste.
