chili candy from Réunion

Ingredients
For 4 servings
- 500 g 500 g peas
- 1 c. à soupe 1 tablespoon cumin
- 1 c. à café 1 teaspoon cumin
- 10 g 10 g ginger
- 1 1 coriander bouquet
- 1 1 onion boot
- 10 10 small pepper
- 0.5 c. à café 0.5 teaspoon saffron
- 1 c. à soupe 1 tablespoon coriander
- salt
- pepper
- 0.5 0.5 banana
- 1 1 calupile branch
Method
- 1.Soak peas in water the previous day (approx. 12 h).
- 2.The same day, remove the skins from the beans by pressing the grain between the thumb and the index finger. This is the most laborious part of the recipe, I think!!
- 3.Drain them, pass them to the blender, you have to get a fine dough.
- 4.Mix together: peppers, ginger, salt, cotomili, calupile, cumin. Finely chop the green onions.
- 5.Mix the peppered spices plus 1 tablespoon of coriander, 1 teaspoon of cumin, green onions, 1/4 teaspoon of saffron, crushed banana and all the pea paste of cap.
- 6.On a wet aluminium sheet, form pellets that make the equivalent of a bite (3cm in diameter).
- 7.Flatten by digging a hole in the centre of the ball.
- 8.Heat the oil in a pan.
- 9.Cook the pepper candy over medium heat.
- 10.Leave each side to brown without too much 'burning'.
- 11.This appetizer tastes warm or warm, or then returned to the oven if already cold (avoid the microwave)
