Chicken Broth with Cabbage

Ingredients
For 4 servings
- 1.5 l 1.5 l water or chicken broth
- 1 1 bouquet garni
- Olive oil, salt, freshly ground pepper
- 2 gousse 2 cloves garlic
- 2 2 onions
- 4 4 Charlotte-type potatoes
- 3 3 carrots
- 1 1 green cabbage, not too large
Method
- 1.Peel the cabbage after cleaning it and removing its base and largest leaves. Then cut each leaf into thin strips. Next, blanch the cabbage strips for 2 minutes in a large volume of boiling salted water. Then rinse them under cold water and let drain.
- 2.Peel the carrots and potatoes. Then cut them into small pieces.
- 3.Peel the garlic, then crush it in a small mortar.
- 4.Peel the onions and slice them thinly.
- 5.In a large pot, sauté the onions and garlic in a little olive oil, no more than a few minutes so as not to color them.
- 6.Then add the vegetables, the bouquet garni, salt and pepper, and pour in the water.
- 7.As soon as it boils, partially cover the pot, lower the heat, and let simmer gently for 30 minutes.
