Chocolate log with frozen browns

- 170 g 170 g Chocolate black
- 6 6 Eggs
- 80 g 80 g Butter
- 180 g 180 g Flour
- 170 g 170 g Sugar
- Salt
- 50 cl 50 cl Liquid cream
- 50 g 50 g Ice sugar
- 1 gousse 1 Vanilla pod
- 200 g 200 g Ice brown bristles
- 100 g 100 g Chocolate black
- 15 cl 15 cl Liquid cream
- 175 g 175 g Butter
- 150 g 150 g Ice sugar
Method
- 1.Preheat oven th. 6 (180 C°). Chop the chocolate and melt it with the butter. Whip the egg yolks and sugar until the mixture whitens. Then add the warm chocolate and flour.
- 2.Beat the white eggs in firm snow with 1 pinch of salt. Add them to the previous preparation. Spread the dough on a baking sheet covered with sulfurized paper. Bake 15 minutes. Get the seeds from the vanilla pod and mix them with the very cold liquid cream. Whip it in chantilly, add in the end the ice sugar and the broken ice browns (except a few for decor). Make a reservation.
- 3.Turn the biscuit over a clean, damp cloth, remove the sulfurized paper and gently roll the biscuit with the towel. chop the chocolate and melt it with the butter. Add sugar and cream. You'll have to mix well.
- 4.Roll the biscuit, spread the chantilly to the browns and roll it again. Spread the icing, divide the remaining browns and serve very fresh.
