Gluten-free Christmas log

Ingredients
For 4 servings
- 300 g 300 g Chocolate
- 250 g 250 g Brown cream
- 20 cl 20 cl Liquid cream
- 4 4 Egg whites
- 4 4 Gelatin leaves
- 50 g 50 g Whole almonds
Method
- 1.Soak the gelatin leaves in a bowl of cold water. Chop 250 g of chocolate over a salad bowl. Pour the cream into a saucepan and heat. When it gets simmered, pour it over the chocolate and mix. Smooth to the spatula and incorporate well-dried gelatin leaves. Add the brown cream and mix well.
- 2.Beat the whites in firm snow and gently incorporate them into the preparation. Chemise a cake mould of film paper and pour the preparation inside. Place in the freezer for at least 3 hours.
- 3.Demolish the log and put it on a dish. Using a saver, make chips with the rest of the chocolate and spread them on the log. Decorate with whole almonds and serve.
