Ingredients

- 150 g 150 g of chocolate NESTLÉ DESSERT Black
- 1 c. à soupe 1 tablespoons of unsweetened raw powder – 100% cocoa NESTLE DESSERT
- 15 15 bouders
- 25 cl 25 cl of cold coffee
- 250 g 250 g mascarpone
- 2 2 leaves of Gelatin
- 3 c. à soupe 3 tablespoons of sugar
- 3 c. à soupe 3 tablespoons of liquid cream
- 2 2 eggs
Method
- 1.Melt the chocolate for 2 minutes in the 500W microwave and spread over a very thin rectangular surface 3 times the size of the base of your log mould. Let the fridge take 2 hours.
- 2.In a bowl of cold water, rehydrate the gelatin leaves. Separate the whites from the yellows, and climb the whites into snow.
- 3.Beat the yellows, sugar and mascarpone. Heat the liquid cream. When the cream is hot, add the previously dried gelatin leaves and mix until homogenized. Add the liquid cream to the mascarpone mixture.
- 4.Pour 1/3 of the mascarpone cream into the log mould. Add over half of the coffee-filled boudoirs, pour the second 1/3 of the mascarpone and then a crisp chocolate rectangle. Add the coffee-filled boudoirs again, the rest of the mascarpone and finish with a third of the crisp chocolate. Have at least 6 hours cold.
- 5.Demolish the log and sprinkle it with cocoa powder. Decorate chocolate breaks.
