Foolproof Salted Butter Caramel

Ingredients
For 700 servings
- 200 g 200 g salted butter
- 1 1 carton of whole liquid crème fraîche,
- 400 g 400 g caster sugar,
- 4 c. à soupe 4 tablespoons liquid honey.
Method
- 1.Put the sugar and the honey in a saucepan over medium heat.
- 2.Stir until you obtain a mahogany-colored caramel (according to your taste).
- 3.Pour the HOT whole crème fraîche into the caramel (watch out for splatters, but if your cream is hot there is no problem).
- 4.Boil for 3 minutes while stirring well; there should no longer be any lumps of caramel.
- 5.Remove from the heat and add the salted butter in cubes and stir well; the butter should melt completely.
- 6.Put into jars and that's it!
