Liquid Caramel

Ingredients

- 40 40 sugar cubes (200 g)
- 1 1/2 lemon
- 20 cl 20 cl hot water
Method
- 1.In a heavy-bottomed saucepan, moisten the sugar cubes with 4-5 tablespoons of water.
- 2.Melt the sugar over low heat. Tilt the saucepan from time to time but above all do not stir.
- 3.Add a dash of lemon juice.
- 4.When the caramel begins to take on an amber color, remove it from the heat and immediately pour in the hot water. Stir and put it back on the heat a little if necessary to dissolve the caramel well.
- 5.This liquid caramel is used to coat floating islands, ice cream sundaes and other desserts.
