Chamallow - Guimauve

Ingredients
For 4 servings
- 250 g 250 g sugar powder or meal
- 60 g 60 g of icing sugar
- 15 g 15 g corn starch Maizena or 20 g
- 3 3 egg whites
- 8 cl 8 cl of water
- 6 6 leaves of gelatin
- 2 2 c. to s. grenadine syrup
- 1 1 Drop of food dye (I am put 4 or 5 red dye for a good pale pink. you can put more if you want)
Method
- 1.Put the gelatin to soak in a bowl of water to soften it.
- 2.Pour the 250g sugar with 8 cl of water into a saucepan. Heat over medium heat until boiled and wait until syrup is 130°C.
- 3.Meanwhile, beat the snow whites with a robot. When the syrup is at the right temperature gradually pour it over the snow whites while continuing to beat. Add gelatin to snow whites (it must be drained beforehand). Add the dyes and grenadine while continuing to beat. Continue to beat until a thick and warm dough is obtained.
- 4.Place the dough in a large rectangular container and let dry hang 2 to 4 hours.
- 5.Cut into cubes and then put them in the mix of mayzena and icing sugar.
