Charlotte with baby strawberries

Ingredients

- 8 8 spoon cookies (or boudoirs)
- 6 6 strawberries
- 1 1 small-sweet
Method
- 1.Cut two strawberries into small pieces.
- 2.Mix the rest of the strawberries.
- 3.Mix half the strawberries mixed with small Swiss.
- 4.Dilute remaining strawberries mixed with hot water (about 50/50).
- 5.Cut the end of the cookies, so that they make the length of the height of your mould.
- 6.Soak cookies in strawberry syrup.
- 7.Tap the mould of the soaked biscuits, cut tip up and curved side on the wall of the mould.
- 8.Place the cut strawberry at the bottom of the mould, in the middle of the biscuits.
- 9.Cover with strawberry petit-suisse.
- 10.Cover small pieces of cut biscuits, to make the bottom of the charlotte.
- 11.Let stand in the refrigerator at least 4 hours before demolishing.
